Hungarian gulyas: one of the soup varieties planned for Union of Genius

With the Eurozone hurtling towards the abyss and the economy teetering on the brink of a double dip, I can’t decide whether this is the best of worst possible time to mention a new soup kitchen which aims to open in Edinburgh a week on Monday.

OK, soup kitchen is a little unfair.

Actually, the Union of Genius, which opens on Monday on Forrest Road, sounds rather snazzy. You can follow their funky blog here in the run-up to the opening.

It’s billing itself as Scotland’s first soup cafe and every day it will serve up to six home-made soups which have been taste matched to different, locally produced artisan breads.

Union of Genius is aiming to be very, very green with loyalty points for customers who bring back their packaging for recycling as well as a comprehensive composting system and a pretty solid commitment to using local suppliers.

The soups on offer will change daily but three will always be highly seasonal. Typical recipes might be the Coronation chicken with almonds; the Hungarian Gulyas with dumplings or the Cullen skink.
