We chatted to Billy from The Pacific restaurant in Glasgow’s West End, about his perfect Christmas.

Anyone familiar with The Pacific will know that it’s all about sunshine and the sound of surf and it brings a Polynesian, Thai and Mexican spin to its Christmas menus.

Forget turkey and try the Pacific Christmas meatloaf,  ground chuck pork, onions, mixed peppers and their own Pacific blend of seasonings served with a dijon mustard mash, winter vegetables and red wine jus. Their Christmas Thai curries are sure to warm you up too like the Massaman beef curry, a southern Thai dish, muslin in slow cooked beef, potatoes and peanuts, served with Jasmine rice.

The Pacific does bring some traditional festive flavours to their menu like the warming ginger in its spiced Jamaican ginger cake served with toffee sauce and banana and lime ice cream.
