Readers whose brains have yet to be addled by too many Christmas parties may recall that in November we blogged about the gingerbread show piece on display in Edinburgh’s Sheraton Grand Hotel & Spa.

We were rather coy about what it actually depicted – mainly ‘cos we didn’t know.

Edinburgh Castle

Well, know we do. It’s a fantastic gingerbread sculpture of Edinburgh Castle, the iconic landmark which is visible from the hotel’s One Square restaurant and bar.

It took Gitana Zinkeviciene and Lewis Maclachlan, the hotel’s talented pastry chefs, two weeks to construct.

Made from gingerbread_,_ marzipan, icing sugar, chocolate and boiled sugar, it measures 2.5 by 1.5 metres.

We recommend that you view it over one of One Square’s remarkable gin and tonics. At the last count, they had over fifty different gins on offer – all matched to different tonics.

Scottish produce

The restaurant’s dinner menu is also looking pretty good.

Shepherd’s pie for two? Braised Scrabster monkfish on the bone with Ayrshire bacon, wild mushrooms with shallot red wine sauce? Highland venison with a red wine poached quince, black cabbage, honey and star anise?

Oh yeah.

Earlier this year, the 5pm Dining blog visited One Square’s exec chef Craig Hart in his hi-tech kitchens.
