Congratulations to Fred Berkmiller. The chef patron of L’Escargot Bleu and L’Escargot Blanc in Edinburgh has been awarded an AA Rosette for culinary excellence at his Broughton Street restaurant.

Fred said, ‘I’m delighted with this award. This achievement is a true testimony to our fantastic team who work hard to consistently deliver exceptional fresh, local Scottish produce.’

‘This is a really special time to be working in the food industry, especially in Scotland, so to receive this recognition now is a real honour and I couldn’t be happier.’

Provincial French cuisine

Fred opened his first Edinburgh restaurant in 1998 and then went on to open L’Escargot Blanc in the West End. In 2009, he renovated an old clockmaker’s shop on 56 Broughton Street to open L’Escargot Bleu with his wife Betty. Both restaurants serve a unique collaboration of classic provincial French cuisine with the finest Scottish, seasonal produce.

The 5pm Dining blog spent an informative morning at L’Escargot Blanc last week. We watched Fred and his team prepare half a pig for the pot.
