British Summer Time has started; the daffs are definitely out and One Square in Edinburgh’s Sheraton are launching their Afternoon Bee tea – it must be spring.
The pastry chefs at One Square have been busy bees. For the last few weeks they have been buzzing (I’ll stop that now) around the kitchen perfecting this honey and floral-themed afternoon tea.
Highlights of the Afternoon Bee include hand-made sugar bees which adorn heather honey and Manjari chocolate ganache macarons.
Naturally, these are garnished with bee pollen and they sit alongside colourful flower pots filled with tiramisu, vanilla cream and chocolate soil – all topped with a chocolate daisy.

Other bee-related features include a passion fruit meringue tart garnished with an edible flower; a honeycomb and blueberry cheesecake plus a chocolate and caramel mousse that is decorated with a white-chocolate image of buzzing bees.
Afternoon Bee is served with a choice of enveloped or loose leaf fine teas and infusions that are traditionally prepared at the table.
Afternoon Bee is served between 2.30pm and 5.30pm throughout April and May. It costs £25 a head.
