As anyone who witnessed yesterday’s parade will know, the West End Festival is well and truly underway in Glasgow.

Running until the 28th of June, it’s actually the 20th anniversary of the festival.

Al fresco ribs

On Sauchiehall Street, The Butchershop Bar and Grill is marking the big anniversary by running the Rib Shack pop-up on their decking.

The idea is to get customers into the summer festival spirit.

While we’re all holding out for sunshine, The Butchershop is prepared for all contingencies including snow.

As well as eye-catching blooms and planters, the recently renovated eco-decking is also kitted out with an awning plus an array of blankets. Snowshoes are not provided.

Alongside a special selection of beers and margaritas , the rib menu is served every day from noon to 5pm during the festival.

Protective clothing

Bibs can be provided in order to avoid any BBQ-sauce/fashion-related disasters. For those not wishing to brave alfresco dining, the menu is also available inside the restaurant.

Speaking about the pop-up, James Rusk, owner of The Butchershop Bar & Grill and Grade A Listed dining venue Hutchesons Bar & Brasserie, says:

‘The West End Festival is a major celebration in Glasgow, and we wanted to do something awesome to mark their 20th year. Over one million people have attended the festival since its inception – it’s a massive melting pot of events and cultural activity. So what better way to mark the anniversary than with our world-inspired carnivorous creations?

‘At The Butchershop, we’re always trying to push culinary boundaries and The Rib Shack is no exception. The meat falls straight off the bone, they’re highly flavour-infused and they won’t disappoint. For anyone wanted to try something finger-licklingly awesome during the festival, get down to the Rib Shack and tuck in!’

Several styles of ribs

The ribs comes in several styles:

Seoul dragon ribs – inspired by head chef John Molloy’s eastern travels. Recommended if you like your meat sweet. The ribs are cooked in gochujang, rice wine vinegar, soy and sesame with cucumber kimchi

Butchershop Kansas style BBQ ribs – traditional ribs, Butchershop-style as chosen by owner James Rusk. These are cooked in the Butchershop’s secret BBQ sauce.

South East Asian style – inspired by the #WEF2015, these are cooked in garlic, ginger, chilli, star anise, coriander and brown sugar.

The ribs are £13.95 each and served with skinny fries, homemade ‘slaw and cornbread.
