Get your kimchi on at Bo.

As we have said many times, it’s a brave or foolish man that calls peak burger in Glasgow. However, there are signs that the city’s burger mania may be slowing down.

In our inbox this morning was news from Ben Dantzic and James Forrest, the team who set up and run the hugely successful Burger Meats Bun restaurants in Glasgow and Edinburgh.

They have shut their West Regent Street branch and, in its place, will be opening Bó Kantina, a Korean-inspired restaurant on Tuesday 1st September.

Burger Meats Bun will re-open in larger, as yet unspecified premises, later this year. Glasgow BMB fans need not worry though as they’ll be able to get their burger fix at various pop-ups.

Of course, if things get desperate, there is always the option of trekking through to the Edinburgh branch.

East meets West

Bó Kantina, we are told, will be ‘a hub for East meets West cooking, where bright and tasty dishes will be created through a fusion of sweet, spicy and pickled influences and traditional Western slow-cooking, finished off with a Mexican twist.’

Diners can look forward to street food sharing starters such bao, or steamed buns, and tacos with East Asian inspired fillings.

We don’t have any further details but customers will be able to build their own main courses or enjoy some more refined, plated dishes such as braised beef short rib with a gochujang glaze, or the traditional Korean sharing dish of Bó Ssam.

Soju cocktails

The Bó Kantina bar will be open late Thursday to Saturday and will serve up a selection of classic cocktails, sours, tequilas and mezcals, as well as bespoke eastern-influenced Bó cocktails which will use ingredients such as Soju, Korea’s most popular spirit.

Ben Dantzic, Director at Bó Kantina, said: ‘Following the success of Burger Meats Bun, we’re very excited to be introducing our new concept of Bó Kantina to Glasgow. At Bó we’ll be offering bright and modern East Asian-inspired food and drink, but with a bit of a twist. Perfect for a dinner and drinks out and also ideal for a quick, fresh lunchtime meal to sit-in or take away.’

James Forrest, Director and Head Chef at Bó Kantina, added: ‘Bó Kantina is born from our love of Korean cooking and we’re looking forward to bringing this new taste to Glasgow, a vibrant city full of culture, which is always keen to explore new flavours and dining experiences.’
