As the 5pm blog reported last month, Ibérica, the casual dining Spanish restaurant chain, was due to open its first Scottish restaurant in Glasgow last week. We attended its opening to experience the restaurant before opening its doors to the public last Friday.

This is no run of the mill restaurant chain; its Executive Head Chef, Nacho Manzano has three Michelin stars behind him and the chain has won numerous plaudits since it launched in 2008 in London.

The menu combines traditional classics with a contemporary edge and the best Spanish produce is shipped in to give an authentic experience.

We were treated to a variety of tapas showcasing their menu. Here’s our pick of six Ibérica tapas you should definitely not miss.

1. Sweet aubergine

The aubergine is served confit-style with a honey sauce on top and toasted pinenuts.

2. Peas with Ham

A simple classic: a poached egg is placed on top of peas mixed with serrano ham, onions and a tomato sauce.

3. Octopus a la gallega

Chunky pieces of grilled octopus are served on top of smoked paprika, cheese and potatoes.

4. Pumpkin salad

A perfect pick for Autumn, this is a warm roasted pumpkin salad with goat’s cheese, lemon thyme and an orange dressing.

5. Fresh mackerel

Served with roast potatoes, the mackerel is in a clam and garlic sauce and parsley and seaweed emulsion.

6. Caramelised Spanish rice pudding

Another great dish for the colder weather is the caramelised Spanish rice pudding. It’s given a twist on the British version with its crème brûlée style hard top to crack before you get to the rice pudding.
