We’re sure that you have all heard the ancient African proverb – ‘Give a man a fish and he will have fish for dinner. But give a man a copy of the new Gamba – A Seafood Cookbook and he can make himself whole lemon sole meunière whenever he wants’.

Just in time for Christmas, Derek Marshall, chef patron of Glasgow’s much loved Gamba seafood restaurant, has launched his second book.

As you know, Gamba is an award-winning, two AA rosette restaurant that has been wowing the city’s fish and seafood fans since 1998.

Fresh and sustainable

The new cookbook reflects Derek’s passion for serving the freshest, sustainable Scottish seafood.

The hardback book showcases many of Derek’s most popular recipes alongside some exciting new interpretations of traditional dishes.

It also provides a platform for the Scottish suppliers – and those from further afield – that provide Gamba with world-class produce and ingredients.

‘All the recipes are essentially quite simple because my philosophy in the kitchen has always been to let the ingredients do the talking,’ explains Derek. ‘Many can be found on our menus in Gamba while others are brand new and yet to be featured. Each recipe calls on fresh, seasonal ingredients and is easy to make at home in your own kitchen.’

Simple suppers and special occasions

Showcasing dishes featuring fish and seafood that are perfect for simple suppers as well as special occasions, the book also offers hints and tips on how to get the best out of great ingredients. Alongside these are foolproof methods for preparing essential recipe components such as stock and salad dressing.

Among the most popular recipes are Gamba’s famous Fish Soup (known as Foup) and one of Derek’s long-time favourites, whole lemon sole meunière – a classic Gamba dish that has graced the menu since the day the restaurant opened.

Chapters featuring sumptuous desserts and a selection of Gamba’s signature cocktails complete the book.

‘It’s been a labour of love collating all the recipes for this book,’ says Derek. ‘Customers often ask us for advice on cooking fish and seafood, and Gamba – A Seafood Cookbook shows them that cooking our delicious recipes at home isn’t complicated if you choose your ingredients well and cook them simply. Scotland has some of the best produce in the world and I hope my new cookbook goes some way to showcasing the fruits of the sea.’
