There are new menus in the Dining Room restaurant at The Scotch Malt Whisky Society and a new Head Chef at The Pompadour by Galvin.

The Scotch Malt Whisky Society has unveiled its new spring/summer menu and cocktail list at its 28 Queen Street venue.

In the Dining Room restaurant, head chef James Freeman has created ten new dishes which feature a selection of fresh, local produce.

Examples include Gartmorn Farm chicken with a purée of wild Alexanders; loin and belly of Scotch lamb with organic potatoes and sheep’s yoghurt purée or the braised beef with spring greens, salt-baked carrots and horseradish turnip purée.

In the Kaleidoscope whisky bar, the Society’s bartenders, led by Anthony Delcros, have created a range of cocktails which reflect The Society’s flavour-based approach to tasting whisky.

The new cocktail list features the Concierge Shandy, a mix of Spicy & Sweet single cask Society whisky, lemon juice, sugar syrup, Picon and wheat beer.

Alternatively, fans of the peated single cask Society whisky will enjoy the more fragrant Peat Tea Infusion. It features a combination of malt whisky with spiced Earl Grey Tea, fresh lemon juice and sugar syrup.

Gin cocktails

Gin lovers can sample The Koh Samui Cocktail with Falernum, lemongrass and ginger cordial, fresh lime juice and ginger beer.

Jan Damen, Operations Director for the Society, said: ‘Having been awarded two AA Rosettes in December we felt that we needed to push our next menu further. We have done that with this range of brand new dishes and cocktails for spring/summer.’

A brief stroll away, The Pompadour by Galvin, located in the five star Waldorf Astoria Edinburgh – The Caledonian, has a new Head Chef.

Chris and Jeff Galvin have named Daniel Ashmore as the man who will lead the team of chefs.

Daniel comes to the role with a wealth of culinary experience from reputable establishments including The Square in Mayfair, Restaurant Tom Aitkens and La Trompette.

Daniel’s previous appointment was Sous Chef at Number One at The Balmoral Hotel in Edinburgh.

Daniel commented: ‘I’m delighted to have the opportunity to work with Chris and Jeff Galvin at The Pompadour. It is one of the most beautiful dining rooms in the country. To have the chance to showcase the best seasonal, Scottish ingredients… is a chef’s dream.

Since his appointment, Daniel has been creating new dishes as well as adding his own spin on the presentation of Galvin classics such as North Berwick crab lasagne and apple tarte Tatin.

Jeff Galvin commented: ‘Chris and I are very excited to welcome such a talented chef to the Pompadour. Daniel has an amazing pedigree and his knowledge of the Edinburgh culinary landscape make him a wonderful addition to our Scottish team.’

Big Deal on five-course tasting menu

The Pompadour is open for dinner from Wednesday to Sunday, and lunch on Saturdays. At the heart of the offering are the five and seven-course tasting menus.

Also on offer is a 3-course a la carte and regularly changing 3-course seasonal menu priced at £35.
