 Nurture Nature, Eat Venison tartare is the sort of dish which will feature at Nurture Nature, Eat.

Nurture Nature, Eat is a new communal fine dining experience which launches in Portobello next week.

It is the brainchild of the Buck and Birch collaborative.  Founded by Rupert Waites and Thomas Chisholm in 2012, Buck and Birch also created Aelder wild elderberry liqueur. The drink launched in November 2016.

Inspired by nature and their foraging exploits, the duo host occasional dining experiences.

The first Nurture Nature, Eat dinner is on Friday 23rd March with further events taking place in May, July, September and November.

Nurture Nature, Eat: a celebration of Scotland’s wild larder

Nurture Nature, Eat is a celebration of Scotland’s natural, wild larder. It will run as a series of special dinners at Dalriada bar on Edinburgh’s Portobello Promenade.

Each multi-course wilderness menu will encapsulate the very best seasonal ingredients. Diners can look forward to a culinary journey along Scotland’s beautiful coastlines and through hedgerows, fields and forests.

The menus will feature game, fish and plenty of wild surprises. To keep everything as fresh and spontaneous as possible, menus - which are typically six courses plus canapés and petit fours - will not be completed until the day of the event.

The menus will be served with wilderness-inspired drinks created by the Buck and Birch team. There will be wines, spirits and liqueurs, including Aelder.

We wrote about Aelder when it first launched a couple of years ago. As you may recall, it is hand crafted in small batches by the Buck and Birch team at East Links Farm in Dunbar, East Lothian.

Wild botanicals

Created by Rupert Waites, head chef and chief forager at Buck and Birch, Aelder debuted at Buck and Birch’s very first dining experience in 2012. It proved an instant hit, with diners immediately requesting to take bottles home.

With the passing seasons, Rupert and creative partner Thomas Chisholm refined the flavour and complexity of their elixir, adding a host of wild Scottish botanicals to compliment the dark, rich fruit of the elderberry.
