Hawksmoor Edinburgh Steaks cuts such as Chateaubriand will be prominent on the Hawksmoor Edinburgh menu.

Hawksmoor Edinburgh have announced plans to launch on Thursday 12th July.

The 170-cover Hawksmoor Edinburgh restaurant will be in the banking hall of  the former Royal Bank of Scotland headquarters on St Andrew Square.

The A-listed building is being developed as The Edinburgh Grand, the city’s new five-star luxury accommodation and social hub.

Hawksmoor Edinburgh: local produce

The menus at Hawksmoor Edinburgh will draw on the amazing produce the UK has to offer. There will be seafood from around the Scottish coast and beef from grass-fed native breed cattle from both sides of the border.

Much of the menu has been reconsidered, with sourdough, cheese, coffee and more sourced from small-scale local producers.

There will be a number of new dishes on the menus. The seafood used will include Peterhead cod, cockle and seaweed butter plus langoustine scampi.

While visiting a Highland cattle farmer on the Isle of Mull, the Hawksmoor team came across a flock of semi-wild sheep. They will appear on the plate as hillside hogget chops.

The new dishes will feature alongside Hawksmoor classics like Old Spot belly ribs, hand-dived scallops with white port and garlic plus charcoal-grilled monkfish.

Hawksmoor founded in 2008

The Hawksmoor group was founded in 2008 by childhood friends Will Beckett and Huw Gott.

Will Beckett said, 'It has been such a pleasure preparing for the opening of Hawksmoor in Edinburgh. Eeating and drinking in the city’s amazing independent restaurants; meeting some of the finest producers in the British Isles and sampling their wares...  We’re trying to build a restaurant that stands the test of time and becomes an Edinburgh institution. We can’t wait to welcome visitors to the room again as it has been closed off to the public for decades.'

Hawksmoor Edinburgh Scottish seafood will also feature at the St Andrew Square restaurant.
