As you are all aware, entries for the 2009 SPAM Cook of the Year have to be submitted by the end of April. The best three SPAM recipes from each of seven UK regions are then put to public vote with the seven winners going forward to the grand final in London in June.

Their SPAM creations will be judged by a presumably select panel of celebrity SPAM fans. Among them, last year’s winner, Stuart Higgs of Chester, whose idiosyncratic recipe using peanut butter and chilli baked SPAM scooped the top prize.

This year’s prize is well worth winning. The 2009 SPAM Cook of the Year will win a seven night stay at the Waikiki Marriot Hotel, return flights and £500 spending money. But best of all, they will get to attend the annual SPAM JAM® Festival in April 2010. Billed as a celebration of the Hawaiian people’s love of SPAM, the event should be a once in a lifetime, must-do pilgrimage for lovers of the cult luncheon meat.

At the time of writing, only three people had entered the Scottish heats of the competition: Mrs Pamela Barrack and her SPAM dippers with ketchup; Louise Meenan with her SPAM balls of fire served with salsa and one Solomon Wang who has entered a recipe for SPAM, jam and lamb.
