The financial climate means that many restaurants are controlling costs by being inventive with cheaper cuts of meat. Supermarkets are reporting that sales of offal are booming. The brawn, hearts and livers which fed older generations are becoming fashionable again. The parts of animals which were once considered waste now have a value.

Still, there is a line in the sand which most of us won’t cross and The Onion has pole vaulted over it.
