We’ve just heard that Roy Brett, king of the kitchen at South Queensferry’s Dakota Hotel, plans to open a new seafood restaurant in the Missoni Hotel in Edinburgh city centre.

Called Ondine, it is scheduled to open in September.

Roy says: “We searched long and hard for the right location and are very pleased to have found it in the new Missoni Hotel. Set against the backdrop of Edinburgh’s historic old town, Ondine will bring together my passion for fish, shellfish and local produce, which will offer locals and visitors something quite different.”
