Scheduled to open on Edinburgh’s Rose Street at the end of this month, pickledgreen is a new eco-friendly deli and restaurant that is aiming for ethical eating.

As well as harvesting grey water, reducing kitchen waste as far as possible and sourcing local food, pickledgreen also plans to employ and train three homeless people a year.

Along with his business partner Mel Colmant, chef Steve Brown is the driving force behind the venture. It’s been a long time since the idea of ethical eating conjured up images of knitting your own mung beans but Steve’s experiences in some of the country’s top kitchens will dispel any lingering worries about ethical food being dull and worthy.

Stints working with Gordon Ramsay and Anton Edelmann in The Savoy mean that Steve’s menu will be more Caithness crab with apple and ginger than lentil bakes.

The introduction of pickledgreen will make the area even more intriguing for foodies who can already set the SatNav for Rose Street and investigate Californian food and wine in Calistoga and Japanese food in Oishii.
