Time for something a little more sensible after our rat pack post. As we gossiped here a little while back, pickledgreen is a new eco-friendly restaurant that has been in development on Edinburgh’s Rose Street for the last few months.

The owners Mel and Steve may have been looking a bit frazzled on Saturday morning but they opened the doors to their new venture at the weekend. All of which means that we can spill the beans in more detail.

Typical dishes include the slow-roasted pork belly with kale and polenta or, from their Christmas menu, roast fillet of hake with root veg and grain mustard.

The deli menu is jam-packed with gourmet sarnies like the mackerel pate and pickled cucumber number or the seasonal sounding guinea fowl, chestnut and cranberry option.

While pickledgreen is in no way advocating that we all start wearing hair shirts and generating our own energy on static bicycles, the lads are trying to operate their business in as responsible a way as they can.

Any business with any PR sense is doing the same but a lot of it is just greenwash. However, the pickledgreen people are putting their money where their mouths are. They set out their green credentials here.

Whether pickledgreen goes on to be a success or not, you can expect to see many more green restaurant mission statements over the next couple of years and theirs looks a pretty good starting point.

Finally, we hear whispers that pickledgreen is in the very early stages of talking to a TV production company. Nothing is definite but we’ll keep you in the loop if anything revealing develops.
