Dominic Jack joins Tom Kitchin's Edinburgh team

Tom Kitchin, chef patron of Edinburgh’s highly regarded Kitchin restaurant, has announced plans to open a new city centre site.

Located on the former site of Abstract, the new venue will be named after its location: Castle Terrace.

Dominic Jack, an old friend and colleague of Tom Kitchin, will be in charge of the kitchen at the new venue which is scheduled to open in mid July.

Michelin Stars

Edinburgh-born Dominic met Kitchin at just 18 when the two were training together as commis chefs at Gleneagles.  Since then, they have enjoyed similar career paths garnering a wealth of experience at some of the world’s top Michelin starred restaurants.

Dominic honed his skills at Michelin starred Fleur de Sel in Haslemere, before he moved to Paris at just 21 to work at the three star Michelin restaurant l’Arpège.  His next move took him to the two star Hotel Vernet-restaurant Les Elysées, where he worked his way up from trainee to sous chef in less than four years.

Legendary chef Alain Solivérès recognised his talent and took him to the three star Michelin restaurant Taillevent where Dominic held the position of sous chef-de cuisine for over four years.  In 2005, Dominic was headhunted for the role of Chef de Cuisine at the luxurious Swissôtel in Istanbul, before he returned to his hometown of Edinburgh in 2008.

Scottish Produce

Tom Kitchin said; ‘Dominic and I have grown up together and though our cooking style is different, we share the same philosophy and passion for seasonal Scottish produce. We’ve spent a long time looking for a second restaurant and really feel we’ve found the ideal location at Castle Terrace.’
