The Big Hospitality site has a good interview with Silvan Giraldin, the maitre d’ at Le Gavroche for decades.

Not everybody wants the sort of service that you would get at the Roux brothers’ place but he still has some useful thoughts about what makes for good and bad restaurant service.

I liked his idea that there should be a reality TV show for waiters. He points out that Jamie’s early Naked Chef persona helped changed our view of the kitchen trade. Perhaps a Naked Waiter character could do the same for our serving staff?
