The Mal at Edinburgh

Malmaison in Edinburgh have teamed up with the Scottish craft beer makers Innis and Gunn for a beer and food matching festival.

The hotel’s head chef has created a special seasonal menu and the brewers have paired each dish with one of their oak-aged beers.

So the rump of Borders lamb with Puy lentils and aubergine caviar (£15.50) is paired with the Triple Matured Innis and Gunn which is described as having dried fruit and oak flavours as well as warm and delicate toffee notes.

For the salmon and herb fishcakes (£13.50), the tip is to go for something lighter such as the Innis and Gunn Blonde with its ‘refreshing hints of vanilla, oak and apricot’.

The menu runs at the 5pm member hotel until the 20th of June and the price of each dish includes a complimentary Innis and Gunn beer.
