Sustainable sourcing is part of Gamba's remit

Congrats to 5pm member Gamba who have become the first restaurant in Glasgow to join the Sustainable Restaurant Association (SRA).

The SRA is a UK-wide not-for-profit association launched in 2010. It aims to provide restaurants with advice and support to help them navigate the whole spectrum of sustainability issues.

Derek Marshall proprietor of Gamba, said: ‘Food provenance and sustainability are extremely important to us, and we are always looking at ways in which we can improve. From how and where we source our fish to the way in which we manage our waste and energy efficiency we are constantly striving to improve.

‘Joining the Sustainable Restaurant Association is part of our growing commitment to the issue of sustainability and we think it is important that we show this to our customers.’

Gamba becomes the sixth restaurant in Scotland to join the SRA, after Urban Angel in Edinburgh (two branches), Itchycoo Bar and Kitchen and Cafe St Honore, all in Edinburgh, as well as The Milton, Crathes.
