Following on from last week’s story about Martin Wishart expanding his Edinburgh operation with a city centre brasserie on North Castle Street, The Herald’s Cate Devine says that Paul Tamburrini will be heading up the kitchen there.

Currently, the chef is in charge of the kitchen at Hotel du Vin at One Devonshire Gardens in Glasgow.

Wishart and Tamburrini have worked together before. Tamburrini was Wishart’s sous chef when his Leith restaurant was originally awarded its Michelin star and Wishart has long talked up Tamburrini in press interviews.

The exact opening date and the name of the new restaurant have yet to be announced.
