The humble pancake is under threat

According to a report in today’s Telegraph, the venerable tradition of making pancakes to mark the start of Lent is under threat from ready made pancakes sold by the usual pantomime villains of the food world, the supermarkets.

However, the blog thinks it may have stumbled across a recipe which might just save us from such a terrible fate.It comes from the good people at Stewart Brewing and, as you might have guessed, beer is involved.

Stewart Brewing Pancakes:

2 large eggs

2 tablespoons of melted butter

3 fl oz of Stewart Brewing beer

4 oz of plain flour, sifted

7 fl oz of milk

Grab a large bowl and sift the flour into it. Break both eggs and whisk together.

Now gradually add the milk while whisking, followed by our beer until you have a smooth batter. You can now add the melted butter to the pancake mixture.

Melt some butter to grease your pan and get it hot before turning it down to a medium heat. Next, spoon your mixture into the pan and cook for a minute or so until golden and flip/toss your pancake to cook the other side.

Serve immediately and enjoy.
