Taste: not just on the tip of the tongue

Most of us take our sense of taste for granted. Or at least we do until we have a cold. It seems simple enough. You put something in your mouth, chew it and your brain tells you whether or not you like it. Seems simple.

But our sense of taste is actually incredibly complex and bound up with much more than just our taste buds. Smell, mouthfeel, age, memory and even altitude all have an effect.

Friday’s Telegraph had an interesting piece with journalist Xanthe Clay talking to a top ‘flavourist’. It is well worth clicking through if you want to know why some foods make the tongue tingle.
