John Paul: his name is above the door at the new restaurant at the Macdonald Hotel in North Berwick

The Macdonald Marine Hotel and Spa in North Berwick formally opens its new restaurant, John Paul at the Marine, this Thursday. Leading the kitchen is the eponymous Executive Chef John Paul. The restaurant, which boasts jaw-dropping views over the North Sea, was formerly known as the Craigleith.

John Paul has a rather tasty pedigree having worked for a certain Mr Ramsay at Amaryllis as well as Raymond Blanc at Le Manoir aux Quat’ Saisons. Most recently, he launched Albannach in London, the Scottish restaurant and bar won two AA Rosettes under JP’s guidance.

As well as brasserie prices, the restaurant at North Berwick promises ‘a modern take on traditional fare, using only the very best from Scotland’s larder’. On the menus, this translates into starters such as the pressing of ham hough with piccalilli and a mousse made with Arbroath smokies. Main courses run from seared fillets of wild hake with West Coast mussels to braised Scottish beef cheeks with creamy mash and a rosemary sauce.

John Paul at the Marine a market menu at £21 for two courses or £27 for three while three courses from the a la carte will come in at around £25-£30 plus drinks.
