Rutland Head Chef David Haetzman: the go to guy for steaks

We weren’t kidding when we said that Edinburgh’s restaurant scene seems to be in a flurry of activity at the mo.

The latest news is that The Restaurant at The Rutland is to be transformed into Kyloe Restaurant & Grill which is billing itself as ‘Edinburgh’s first gourmet steak restaurant’.

Their rather good a la carte menu will still run but Head Chef David Haetzman will also be offering  at least eight different cuts of pedigree Aberdeen Angus Steak.

Diners will also be able to enjoy ‘The Kyloe Steak Board’ featuring a selection of unusual and interesting cuts, and a ‘Burger Slider’ which includes three variations of burger – venison and redcurrant, wild boar and apple, and Aberdeen Angus fillet.

The name Kyloe, an old Scots word for Highland cattle, was chosen for the new restaurant as it represents the strength and versatility of Scottish beef produce.

Chef Haetzman has this to say: ‘Everyone loves a good steak so we are determined to give our diners the best steak experience possible. In our endeavours to become Edinburgh’s top steak restaurant we have spent considerable time searching for the best suppliers of beef and decided to use two main suppliers who we believe have fantastic products which will provide a great experience for the customer – Hardiesmill, based in Gordon in the Borders, and Hendersons, a small family-run butcher in Glenrothes. As well as traditional cuts we have chosen some less familiar cuts for their texture and flavour.’

As well as the new steak menu, the interior design of the restaurant is to be overhauled.

The restaurant will be closed for refurbishment from this coming Sunday until the afternoon of Friday 21 October.

During this time guests can eat in The Rutland Bar, where the restaurant menu will still be available, however food will not be served on Monday 17 October due to kitchen renovations.
