In Edinburgh, Redwood restaurant on St Stephen Street has been replaced by Purslane.

Paul Gunning is the chef owner and he is aiming to deliver ‘casual fine dining’.

The idea is to have a relaxed atmosphere, slightly rustic surroundings and top notch food.

Typical dishes might include a start such as cock-a-leekie soup. Except this is no ordinary cock-a-leekie. At Purslane, it’s a chicken consommé covering a chicken, leek and prune terrine. There is a quenelle of prune purée in the mix along with a baby leek garnish.

Rather than bread croutons to float in his deconstructed cock-a-leekie, Paul has made croutons from confit chicken legs.

At present, Purslane is open for lunch Wednesday to Sunday and for dinner, Wednesday to Saturday. The opening hours will expand as the venture finds its feet.

Dinner is £19.95 for two courses and £23.95 for three.

Paul’s career has seen him work everywhere from London to Brittany via Australia and his CV includes stints at Gusto, The Balmoral. The Lowry in Manchester, La Garrigue and Dalhousie Castle.
