][1]It has been in the air for a while but there has now been an official announcement that Michelin-starred restaurateurs Chris and Jeff Galvin are to open two restaurants in Edinburgh’s Caledonian Hilton hotel.
The hotel’s existing Pompadour fine dining restaurant will re-open as Pompadour by Galvin and while the Galvin Brasserie de Luxe will be a more casual offering. Both are expected to open in August in time for the festivals.
The Caley is currently undergoing a multimillion pound refurb and rebranding as a Waldorf Astoria and bringing in big name chefs is part of the exercise. Craig Sandle, formerly of number one at The Balmoral, will be the exec chef at both restaurants. Expect seasonal Scottish ingredients used in French-inspired dishes.
In London, the Galvins operate a number of restaurants including Galvin Bistrot de Luxe, Galvin at Windows, Galvin La Chapelle and Café au Vin.
