Peter’s Yard pizza: no short cuts

As usual in the run-up to the Festival in August, Edinburgh’s restaurateurs have gone into a frenzy of opening new venues.

As well as the Galvin brothers opening two new upmarket restaurants in The Caledonian Hotel, Jamie Oliver will be causing a splash in the mid-market when Jamie’s Italian opens in the revamped Assembly Rooms.

But it’s not just the big names which are planning to open new ventures.

In Stockbridge, the team behind Peter’s Yard are hard at work on a new pizzeria. They have been trialling their ‘no compromise’ pizza at their Quartermile premises since the beginning of the year and are now ready to launch a stand alone pizza restaurant on Deanhaugh Street.

The ‘no compromise’ part of the concept refers to the ingredients used. From their pre-launch publicity, it seems that they will be creating their pizza with flour from Shipton Mills; buffalo mozzarella from Campagnia and salami Ventricina from Abruzzo.

I’m not sure whether it is a bold or suicidal move but the new venture is opening two doors down from the well established Pizza Express.
