Mattia Camorani of Cucina at Hotel Missoni: knows his truffles

You don’t need to be Einstein to realise that there has been a distinct shortage of sunshine so far this summer. While there may be little chance of getting tanned in Tighnabruaich or bronzed (not naturally anyway) on Buchanan Street, some of summer’s pleasures can still be had in Scotland.

Cucina at Hotel Missoni, twice winners of the Best Italian Restaurant at the Scottish Restaurant Awards, are now serving their summer black truffle menu.

Sourced from the Umbria region of Italy, the black truffles are at the peak around now and, according to head chef Mattia Camorani, this year’s harvest has been particularly bountiful: ‘Black truffles are one of my favourite ingredients to work with, adding depth and flavour to any dish. We have been anxiously awaiting the arrival of the special truffles from Italy, and this year we have received the largest truffles we’ve ever had.’

Mattia and the team at Cucina have created a three course truffle menu at a value for money £35. Specific dishes might change but truffle fans can look forward to dishes such as soft polenta flavoured with Stracchino cheese and summer black truffle or pork fillet with pancetta, mashed potato and summer black truffle.

If truffles don’t float your boat, you may want to think about the rather fine pre-theatre menu which offers two course for £16.
