Always wanted to make bread but never known how? Or worse – had a go at making bread and produced something that the building trade could use in construction.
Scottish Chef of the Year 2011
Help is at hand in the form of Neil Forbes, chef at Café St Honoré, former Scottish Chef of the Year at the Scottish Restaurant Awards and all-round good guy.
On Saturday 24th November, Chef Forbes will be leading a Slow Food master class in bread making.
Kicking off at 11am with shortbread and coffee, the class will cover creating a natural yeast starter for a simple sourdough; why different flours are used for different breads; the art of kneading and why dough is proved, as well as sharing recipes for speciality breads such as focaccia.
Festive baking
The morning will also include festive baking including brioche and panettone. Veering slightly from the bread theme, Neil will also share his recipe for the perfect Christmas pudding.
There will be lots of opportunities to ask questions and things to taste during the demo.
Tickets cost £25 and include a two course lunch and include a glass of wine, Innis & Gunn beer or Cuddybridge apple juice.
Here’s the menu:
Home-made sourdough bread
Fillet of hake with cheese and herb crust, leek and potato chowder
Bread and butter pudding, marmalade ice-cream
Artisan Roast coffee and tablet
The end of November is a long time to wait for a taste of Neil’s cooking. If you can’t wait that long then check out his menus here.
Big Deal baking
On a related note, we are currently running a Big Deal on a bed and breakfast stay plus a bread making course at the rather lovely Munro’s B&B on the Isle of Bute. Check the details here.
