A couple of weeks back the 5pm Restaurant blog mentioned Glasgow’s Cocktail and Burger, a new venture from Colin Barr which serves the dude food staples of gourmet dogs and burgers.

‘When oh when will someone open something similar in Edinburgh?’ we whinged while conveniently overlooking the fact that Lothian Road’s Hanging Bat, a craft beer bar which we have often mentioned, is doing just that.

Well, guess what? The Bat has competition. The Huxley opened last week in the Rutland Hotel at the bottom of Lothian Road.

According to The Huxley’s blurb, the brains behind the outfit spent most of last year traveling the globe on a burger fact finding trip. Nice work, if you can get it.

Chuck steak burger

The end result is The Huxley’s range of burgers, all made with chuck steak and topped with ingredients such as Dunsyre Blue cheese and bacon from Ramsay of Carluke.

Equally as interesting are the dogs. As well as the naked dog (a bracing £6.50), guests can order up a chilli cheese or Chicago dog topped with blue cheese, celery and buffalo sauce.

Sriracho mayo

The most fashionable dog of all is the kimchi dog which is flavoured with sriracha mayo – a hot, garlicky sauce which, for the last couple of years, has had Stateside dirty food aficionados crying into their artisan beer.
