Henderson’s Salad Bar was ahead of its time in 1963

Henderson’s on Hanover Street in Edinburgh is something of a city institution. The business opened 50 years ago in the spring of 1963 and is still going great guns – if that’s the correct expression for a veggie restaurant.

The operation had its origins in the East Lothian farm shop of Janet and Mac Henderson, the founders of Henderson’s Salad Bar.

Radical culinary idea

The plan was to sell local, seasonal food in to Edinburgh city centre. These days, every restaurant, bistro and bar at least claims to use local and seasonal produce but, fifty years ago, when frozen and dried convenience foods were seen as cutting edge, the Henderson’s idea was a groundbreaking, even radical one.

Half a century on and the rest of the world has come around to the Henderson’s way of thinking and the original salad bar has grown to include an onsite bakery, bistro and two restaurants.

Back to ’63 party

The business is marking its 50th with a 50 day-long celebration starting with a Nifty at Fifty half marathon run on Sunday followed by a Back to ’63 Festival Launch Party. Party-goers are invited to look out their kaftans and tie dyes.
