There are interesting moves afoot in Edinburgh’s Fountainbridge where a new burger restaurant has opened.

Simply called Burger, it is positioning itself above the fast food chains but it is also steering away from the fashion for artisan and increasingly exotic burgers which have flourished of late in Glasgow.

Like other fast casual restaurants, everything is cooked to order but Burger also tries to source locally rather than using centralised buying.

Green policies

Naturally, they are striving to be as green as they can with environmentally friendly processes and compostable packaging.

Their mission statement is rather admirable:

‘We believe there is a real need for a radically simple, delicious, affordable burger. We certainly don’t see ourselves as upmarket. Yet we are a long way removed from a fast food chain. We want to be accessible – so you will find us in the most buzzing areas of the city. We want to be affordable – but to always offer the freshest ingredients, prepared and cooked exceptionally well.’

Certainly the menu reads well.

Chipotle lime-glazed burger

The classic burger is a 4oz Scottish beef burger served on a lightly toasted brioche bun with tomato, pickle and the firm’s own Burger sauce. It sells for £3.95.

Variations include a chipotle lime-glazed burger with smoked Cheddar and Yucatan pulled pork; a chicken Caesar burger and a chilli dog.

According to this interview with our friends at STV, the company already have plans to open another three restaurants in Edinburgh in the next year.

Of course, Burger are not the first to try and develop a good quality fast food burger offer. If memory serves, Edinburgh’s Wannaburger launched with similar ambitions.
