The wait is over. The wraps come off Edinburgh’s Burger Meats Bun today.

The 5pm Dining blog is delighted on two fronts this morning. First up, we would like to extend a warm welcome and manly hug to Burger Meats Bun, which opens on Edinburgh’s Forth Street at midday today.

Secondly, we are delighted as we get to use the word serendipity. As in: by fortunate serendipity Burger Meats Bun is opening in Edinburgh exactly a year to the day since they opened on West Regent Street in Glasgow.

Artisan suppliers

The Edinburgh BMB looks set to follow in the footsteps of its older Glaswegian sister operation. Scottish artisan suppliers and producers like The Aberfoyle Butcher, Gartmorn Farm and cheesemonger George Mewes will be supplying raw ingredients such as organic chicken, the best Scotch beef and interesting cheese.

Once the kitchen has worked its magic, these will be dished up to customers in the form of tasty offerings such as the Smokin’Bacon – a Scotch beef burger on a brioche bun with home cured and smoked bacon, Dale End cheddar, spiced ketchup, BMB burger sauce and braised onions.

Fine dining pedigree

The 5pm Dining blog knew that the team behind BMB had a fine dining pedigree but we hadn’t realised just how starry it was.

Ben Dantzic and James Forrest are the guys behind BMB and they met working at the Michelin-starred Peat Inn in Fife.

Director and Manager Ben Dantzic was most recently the Manager at Restaurant Andrew Fairlie in Gleneagles Hotel before opening the first Burger Meats Bun in Glasgow in 2013.

Cool interior

Speaking about the new Edinburgh venture, he said: ‘Burger Meats Bun fuses high quality produce and mouth-watering recipes with a cool interior and atmosphere to offer a brilliant, yet accessible culinary experience. We’re really pleased with how the concept has been received in Glasgow in the last year and are now excited to be expanding our business and bringing it to Edinburgh.’

Director and Head Chef James Forrest, who has worked as a chef in Etain and The Peat Inn, added: ‘From our experience working in the fine dining sector with some of the best chefs in the UK, we noticed a real gap in the market for a casual concept, using first-class ingredients and making everything from scratch, and Burger Meats Bun does just that. We hope that Edinburgh foodies will enjoy it as much as our Glasgow customers have.’
