The 5pm Dining blog dropped by Heads and Tales, the West End, Edinburgh, basement bar which is also home to Edinburgh Gin Distillery.
As you might expect from a bar which contains numerous gin stills, the bar staff at Heads and Tales are dab hands with a gin bottle and a cocktail shaker so we asked Emma to whizz up something suitable for a warm spring evening.
The result was a Gin Fizz made with Edinburgh Gin’s Raspberry Liqueur.
‘It’s a simple cocktail but it’s bright and fresh,’ explained Emma. ‘We’re coming into summer so the fresh flavours work well. To accentuate the freshness of the drink we’re going to garnish it with a mint leaf and a wheel lemon.’
Edinburgh Gin Raspberry Fizz
Ingredients
50ml of Edinburgh Gin Raspberry Liqueur
25ml of freshly pressed lemon juice
A dash of egg white
Soda water
Method
Shake liqueur, lemon juice and egg white in shaker with ice. Strain into chilled tall glass. Top up with soda and garnish with mint and lemon.
