As the Edinburgh Fringe kicks off, new food and drinks venues continue to launch in the capital and make their bid for your discretionary spendoolicks.

In the West End, Foundry 39 is finding its feet after launching a few days ago. It is on Queensferry Street in the premises which were formerly occupied by a short-lived branch of the Chimichanga chain.

Before that it had been Bar Roma for more than thirty years.

If Bar Roma attributed some of its amazing longevity to the popularity of their pasta and pizza then Foundry 39 will be hoping that their sourdough pizzas bring them similar good fortune.

They are cooked (baked?) in wood-fired Gozney Professional Ovens which can reach a temperature of more than 400 degrees centigrade.

Alongside breakfast and brunch offers, the menus include a range of salads, sides and sharers such as wings, fried pickles and garlic doughballs.

As well as pizza, Foundry 39 majors in burgers made from chuck, brisket and dry-aged flank beef. Options start at £7.95 for the cheeseburger rising to £9.95 for the Black and Gold, a 6oz dry-aged beef patty with black pudding, double cheese, American mustard mayonnaise and sliced beef tomato.

Cocktails a-go-go

The West End has plenty of office workers who like to wash the working week/day out of their hair with a drink or two.

Foundry 39 aims to get them through the door with an extensive cocktail list which includes its own Bloody Mary section.

If your Saturday ever needs a kick start then the Oriental Bloody Mary – made with wasabi paste, sticky plum sauce and ginger root – should set you back on the path to righteousness.

Foundry 39 is the prototype of a new brand being developed by Revere, the upmarket bar bistro arm of Marston’s.

All being well, the company hopes to launch a second branch in an as yet undisclosed location later this year.
