Visual and culinary fireworks are on the menu at The Pompadour by Galvin this August.

If you are looking for a spectacular way to bring the curtain down on Edinburgh's various festivals, then The Pompadour by Galvin, part of the Waldorf Astoria Edinburgh – The Caledonian, has some tasty suggestions.

On Monday 27th August, ahead of the firework display in Princes Street Gardens, The Pompadour will be serving a seven course tasting menu.

Head Chef Daniel Ashmore has designed a very special menu to mark the end of this year’s Edinburgh International and Fringe Festivals.

Highlights include:

Raviolo of scallops and langoustines, oyster and chive dressing and iceberg lettuce

Pepper-glazed Goosnargh duck, orange, turnip and confit leg

Dark chocolate parfait, Scottish blackberries and blackberry leaf ice cream

Following dinner guests will be invited to take a front row seat to watch the award-winning firework display.

Guests will be able to enjoy the stunning views of the fireworks from the large Castle-facing windows in the restaurant.

The menu is priced at £125 per person. There is the option of adding wine pairings that have been hand-selected by Sommelier Damien Trinckquel for an additional £75 per person.

Later that week, Executive Chef James Wang will be paying a visit.

Chef Wang is from the Caley's sister hotel in Beijing and, along with The Pomp's Dan Ashmore, he will be hosting a series of Cantonese-British evenings in The Pompadour by Galvin.

The chefs will delight guests with an eight course collaborative tasting menu, served in the beautifully restored Pompadour dining room.

The launch evening on the 29th August will feature authentic Chinese entertainment and live music.

The menu has been designed to alternate between the chefs giving each the opportunity to showcase their cuisine using the finest ingredients.

Highlights from the menu include:

Isle of Wight tomatoes, basil ricotta, minus 8 vinegar and ajo blanco by Daniel

Cantonese style, pan-seared Wagyu beef with asparagus and black pepper sauce by James

Baked loin of cod and cauliflower with king oyster mushroom and brown butter by Daniel

Chilled mango, sago, pomelo and mango ice cream, served with fresh seasonal fruits by James

Dale MacPhee, General Manager at Waldorf Astoria Edinburgh – The Caledonian, said: 'This is a very exciting opportunity for us to host such a unique gourmet experience in the capital with our sister hotel. The recent launch of Hainan Airlines direct flight between Scotland and China has made the city much more aware of the opportunities to engage this new market. We look forward to our reciprocal visit in the autumn when Dan will co-host a series of dinners in Beijing.'

The tasting menu is priced at £75 per person and wine pairings will be available for an additional cost. It will be available between 6-9pm from 29th August until 2nd September at The Pompadour.

Big Deal at The Pompadour by Galvin

Alternatively, you could book in to The Pompadour by Galvin with this Big Deal.

The Deal is a five course Discovery Menu for two people with wine pairings and tea or coffee to finish.

It is available from 6pm to 8.30pm, on Wednesday, Thursday, Friday and Sunday evenings. The Big Deal is £125.
