For most of us, summer holidays are still some way off.
Happily, EVOO on Cowcaddens Road has started serving up sunshine on a plate.
Situated opposite the Theatre Royal, this compact new restaurant serves, brunch, lunch and early dinners. Handy if you plan to spend your night in the stalls.
The kitchen dishes up small plates and sharing dishes from around the Med. More specifically, the chefs draw inspiration from Spain, Italy, Morocco and Greece. Bread, freshly baked on the premises, will be a big feature.
The menu will change regularly and there will be a good selection of daily specials. Main pic shows grilled langoustines in 'Nduja butter and a plate of herb-seared tuna Nicoise, quail egg, green beans, olive soil from restaurant's Facebook.
EVOO - the names comes from Extra Virgin Olive Oil, a staple of many a Mediterranean diet - was recently advertising for a second chef and the ad pointed out that the 'emphasis is on fresh, local ingredients' in order to create 'modern Mediterranean dishes'.
All of which ticks lots of boxes for us.
EVOO has only just opened its doors so we have yet to get our gnashers around the menu but it looks the part
We wish EVOO every success.
