Glasgow Pinto to be the first of many

Following on from yesterday’s nib about the Pinto restaurant taking shape on Glasgow’s Queen Street, it’s a bigger deal than I thought.

Billed as serving Mexican street food, Pinto will be a burrito bar modelled on the fast casual style of restaurant which is so popular in the States.

Several cuts above a fast food joint but without the full service format of a bistro, Pinto will offer a beef burrito and beer for around £8.50.

Each burrito will be made fresh to order at the Pinto counter and customers can then choose to take it to a table or takeaway.

Scheduled to open in the next fortnight, the 70 seat restaurant will be the first of six which are initially planned for Scotland. Negotiations are under way on another two sites in Glasgow and three in Edinburgh.

If the idea is a success then the next step is to roll them out in all the university towns in the UK.

The DiMaggio Group and businessman Paul Sloan are involved in the project.
